Marketing Duckweed As A Sustainable “Superfood”

Researchers from ETH Zurich Cyrill Hess and Melanie Binggeli are determined to market duckweed or “water lentils” as a healthy food which is still not a familiar name in the European kitchens. Duckweed grows faster than other crops and contains all the essential proteins,  fibre, and few carbohydrates. Their research is focused on developing a sustainable food system through research and alternative crops to combat the climate crisis. As soon as they get approval from the European Union, they will work on other challenges so that consumers can find this healthy food alternative on the supermarket shelves.
